Real Wedding, Real Flavours: A Traditional Spit Braai at Gaanzekraal Holiday Resort

There is something special about bringing people together over great food, and that’s exactly what we had the privilege of doing at the beautiful Gaanzekraal Holiday Resort for the wedding of Parnell and Anicia.

The couple wanted a relaxed South African celebration where family and friends could enjoy generous portions, quality ingredients and a memorable dining experience. Our team prepared one of our most popular wedding menus, centred around our traditional spit braai.

The star of the buffet was our slow-roasted 450g A-grade bone-in lamb, cooked to perfection on the spit until tender and full of flavour. Served alongside succulent chicken quarter legs, it gave guests the authentic South African feast they were hoping for.

One of the biggest talking points of the day, however, wasn’t the lamb. It was our famous curry pasta salad. Made fresh on the day with a creamy, mildly curried dressing and packed with flavour, it has become one of Red Bird Catering’s signature side dishes. It perfectly complements roasted meats and is a favourite at weddings, corporate events and private functions alike.

The buffet was completed with savoury rice, creamy spinach, sweet pumpkin and a fresh Greek salad, creating a balanced menu that offered something for everyone.

As always, our goal was simple: serve generous portions, keep the buffet looking beautiful throughout service and make sure every guest left satisfied.
